Chef LaLa Chicken* Fajitas Recipe

RECIPE

1 Pound boneless, skinless chicken breast halves
½ tsp. olive oil
2 tsp. lite soy sauce
1 medium orange, juiced
1 medium lime, juiced
1 tbsp. cilantro, finely chopped
2 cloves garlic, minced
1 tsp. seasoned salt
1 tsp. pepper
1 ½ tsp. canola oil
3 oz. red bell pepper, seeded, sliced lengthwise
3 oz. red onion, peeled, thin slice
1 each jalapeno, seeded, small dice
1 tbsp. soy sauce, low sodium

INSTRUCTIONS

  1. Slice chicken breasts into ½ inch slices
  2. In medium bowl, combined olive oil, lite soy sauce, orange juice, lime juice, cilantro, garlic, seasoned salt, pepper
  3. Pour mixture over chicken. Stir to fully coated.
  4. Cover, refrigerate, and allow to marinade for 2-4 hours
  5. Heat canola oil in a large skillet over a high heat-to achieve stir-fry
  6. Drain excess marinade from chicken
  7. Add chicken to skillet, sauté for 3 minutes, until golden brown
  8. Add red and green bell peppers, onion, and jalapenos
  9. Sprinkle soy sauce over vegetables, stir constantly
  10. Vegetables should be cooked, but still firm
  11. Serve immediately
