Green Eggs & Ham Recipe

Ingredients

  • 8 ounces tomatillos, husks removed, charred on a grill
  • 1 jalapeño chile, charred on grill
  • 1 garlic clove
  • ¼ teaspoon salt
  • ½ cup olive oil
  • ¼ cup onion, peeled and thinly sliced julienne style
  • 6 ounces smoked ham or canadian bacon, diced or cut in strips
  • nonstick cooking spray
  • 4 eggs
  • 4 tostadas

Preparation

  1. Put the tomatillo and jalapeno and salt in a blender or food processor and puree
  2. Heat olive oil in large skillet over medium-high heat. Add onion and cook for 3 minutes
  3. Add ham and cook until tender and lighlty browned
  4. Add tomatillo mixture and simmer 10 minutes
  5. Heat a small skillet over medium heat; spray with nonstick cooking spray
  6. Cook batches o2 2, break eggs into pan one at a time. Cook to desired firmness
  7. Slide egg onto Tostada and top with tomatillo and ham mixture — Serve immediately

Tostada Recipe

Ingredients

  • 1 cup canola oil
  • 4 corn tortillas

Preparation

Heat oil in a small skillet over medium-high heat. Fry tortillas until golden brown, about 2 minutes oneach side

Chef’s Note: For a low fat version, toast tortillas on griddle or nonstick pan until golden brown.
