Green Eggs & Ham Recipe
Ingredients
8 ounces tomatillos, husks removed, charred on a grill
1 jalapeño chile, charred on grill
1 garlic clove
¼ teaspoon salt
½ cup olive oil
¼ cup onion, peeled and thinly sliced julienne style
6 ounces smoked ham or canadian bacon, diced or cut in strips
nonstick cooking spray
4 eggs
4 tostadas
Preparation
Put the tomatillo and jalapeno and salt in a blender or food processor and puree
Heat olive oil in large skillet over medium-high heat. Add onion and cook for 3 minutes
Add ham and cook until tender and lighlty browned
Add tomatillo mixture and simmer 10 minutes
Heat a small skillet over medium heat; spray with nonstick cooking spray
Cook batches o2 2, break eggs into pan one at a time. Cook to desired firmness
Slide egg onto Tostada and top with tomatillo and ham mixture — Serve immediately
Tostada Recipe
Ingredients
1 cup canola oil
4 corn tortillas
Preparation
Heat oil in a small skillet over medium-high heat. Fry tortillas until golden brown, about 2 minutes oneach side
Chef’s Note: For a low fat version, toast tortillas on griddle or nonstick pan until golden brown.
